This recipe is a first time recipe for me. It's title is Famous Hawaiian Hunky Bunch Mango Bread2 cups all purpose flour1-1/2 cups sugar1/2 tsp. salt2 tsp. cinnamon2 tsp. baking soda1 grated coconut1/2 cup raisins (I didn't use it but instead put in mac nuts--delish)2 cups fresh mango, diced3 eggs, slightly beaten1 tsp. vanilla extract3/4 cup vegetable oilPrepare four loaf pans (2-1/2 x 5 inch) with nonstick spray or buttering them. I used a regular loaf pan and a small one. Mix flour, sugar, salt, cinnamon and baking soda. Stir in coconut and raisins (or mac nuts). Next, add mango. Mix well and then add eggs, vanilla extract and vegetable oil until blended. Don't over mix.Fill prepared pans two thirds full and bake at 350 degrees for 55 minutes for smaller pans or 1 hour (mine was 70 minutes) for larger pans.
